Cool Meals for Hot Nights

     The lettuces in my itty-bitty courtyard garden are going crazy- almost ready to bolt, so… time to pick, and enjoy the slightly bitter, full nutty-flavored leaf that is arugula.
     Last night, I sauteed chicken in a lemony butter, whipped-up an anchovy-oil-salt-creole mustard dressing, tossed everything together, and served with a  green pea-dotted lemon zest-sprinkled side of Risotto.

So simple.
So good. 
So cool, on a 
hot summer night.
